The preparation of this dish is very fast, easy and simple.

Quick and Easy Salmon and Egg Stuffed Avocado


3 avocados, large

6 eggs, small

3 smoked salmon slices

1 tablespoon chives, finely chopped

Pinch of cayenne pepper

Toasted bread, to serve



Preheat the oven to 390 degrees Fahrenheit.

Cut the avocados in half (lengthwise) and remove the stones.

Cut the bottom of each avocado half in order to make a flat surface and arrange them on a baking pan.

Separate the egg yolks from the whites.

Cut the smoked salmon slices into pieces.

Scoop out some of the middle of the avocado to make more room and put some of the salmon. Add the egg yolks.

Beat the eggwhites and pour over the avocados.

Season with salt and pepper and place them in the oven for about 10 minutes.

Sprinkle with finely chopped chives and some cayenne pepper (optional).

Serve over toasted bread.
