Delicious and very easy to make vegetarian burgers with cheese sauce. Low in calories and perfect for a midweek meal.
1 pound raw beetroot, peeled and grated
1 onion, chopped
1 teaspoon cumin seeds
15 ounces chickpeas, drained well
2 tablespoons sesame seeds
¼ cup feta, crumbled
1 tablespoon olive oil
½ teaspoon dill, finely chopped
½ teaspoon parsley, finely chopped
½ teaspoon mint, finely chopped
½ cup fat-free yogurt
red onion, finely sliced
Preheat the oven to 430 F. Sauté the chopped onion and cumin seeds in little olive oil for about five minutes or until soft. Pour into a blender together with the beetroot, egg, chickpeas and ½ of the sesame seeds. Season to taste and blend until well combined. Shape the mixture into 8 burger patties. Line the baking tray with baking paper and arrange the patties. Sprinkle with the rest of the sesame seeds. Bake for 30-40 minutes. When they are nice and firm take them out of the oven and allow to cool for 5 minutes.
In a bowl, mix the feta cheese with the finely chopped dill, parsley and mint, add the yogurt and make a nice sauce for the burgers.
Toast the burger buns, place one patty, smear some of the sauce and put some lettuce and red onions.
