Super Quick and Easy Mushroom and Tarragon Stroganoff

Stroganoff is a popular Russian dish usually made with beef and sour cream. This dish originated in the 19th century and now is very popular around the world. This is a super quick, very easy and low calorie version made with mushrooms and tarragon.

Super Quick and Easy Mushroom and Tarragon Stroganoff


½ cup button mushrooms, sliced

3 tbsp sour cream

1 onion, diced

1 clove garlic, crushed

½ bunch tarragon

Olive oil

Cooked rice to serve


In a skillet, heat the olive oil and add the onions. Fry for about 5 minutes or until soft. Add the sliced mushrooms and crushed garlic and cook for another 5 minutes or until the liquid from the mushrooms evaporates and they are golden in color. Add the sour cream, little water and tarragon. Simmer for about a minute, season with salt and pepper and serve with cooked rice.
