Everyone likes crispy potatoes combined with salad or tomato sauce. Many of us prepare potatoes with vegetable oil and this way they contain many bad calories and are not really healthy for consumption.
Therefore we offer a great recipe for baked potatoes – Mediterranean way, which are prepared with olive oil, and are enriched with beautiful aromas of oregano and garlic. Lean, vegetarian, gluten-free and healthy!
2 pounds new potatoes
freshly squeezed juice from 1 lemon
2 teaspoons olive oil
1 teaspoon oregano
¼ teaspoon ground black pepper
¼ teaspoon salt
2 cloves garlic
Water as needed
Wash the potatoes and peel them. Cut each potato in 8 pieces.
Finely chop the garlic cloves.
In a large bowl, mix the freshly squeezed lemon juice, olive oil, oregano, pepper, salt and finely chopped garlic.
Roll each potato wedge in the mixture so it’s well covered.
In a greased baking pan arrange the potatoes and add a little water. Place it in a preheated oven at 390 degrees and bake for 45 minutes, until potatoes are golden brown and crispy. Then remove the pan from the oven and leave the potatoes to cool down a bit.
Serve the freshly baked Mediterranean potatoes in combination with green salad or your favorite sauce.
