A Recipe of Tomato and Lemon Salad
- 2 cups of cherry, yellow and red tomatoes
- 2 lemons
- Half a red onion
- 9 ounces of corn salad or arugula
- 1/3 cup parsley
- Pomegranate seeds
- Half a cup of mint
- 3 teaspoons of extra virgin olive oil
- A pinch of salt and pepper
- Half a teaspoon of 4 spices (ginger, clove, cinnamon, nutmeg)
- One and half a teaspoon of pomegranate molasses
- Half a teaspoon of stevia powder
Method of Preparation:
Cut the lemons in thin slices and then place them in a saucepan with water to boil. Simmer it for 5 minutes. After that, drain them and place them in a bowl. Pour over them the olive oil, and then season them with a pinch of salt and stevia. Next, on a baking sheet, spread parchment paper and divide the lemon slices. Put them in the oven to bake for 20 minutes. When your lemon slices are well grilled, take them out from the oven, and then leave them to cool off and cut them in halves.
