The authors of this study monitored the volunteers’ sensitivity to three different bitter flavors: caffeine (present in coffee), quinine (accountable for the bitter taste of sparkling) and propylthiouracil (a bitter synthetic compound). It was revealed that people whose genes were very sensitive to quinine and propylthiouracil drank less coffee. However, people who were more sensitive to the bitterness of caffeine drank more coffee.
