The authors of this study monitored the volunteers’ sensitivity to three different bitter flavors: caffeine (present in coffee), quinine (accountable for the bitter taste of sparkling) and propylthiouracil (a bitter synthetic compound). It was revealed that people whose genes were very sensitive to quinine and propylthiouracil drank less coffee. However, people who were more sensitive to the bitterness of caffeine drank more coffee.

Conducted studies have revealed that the consumption of coffee can reduce the chances of heart failure, stroke and coronary artery disease. A performed study by researchers at the University of Colorado’s Faculty of Medicine showed that the consumption of 20 cl a day lowers the chances of these diseases by 7% in case of heart failure, 8% in case of stroke and 5% in case of artery diseases. This was not the case with the people who did not drink coffee at all.

The researchers released their findings in the Journal of Natural Products where they explained that the content of a bioactive compound known as cafestol stimulates the secretion of insulin. This helped in the reduction of the fasting blood glucose and bettered the insulin sensitivity thereby preventing the occurrence of type 2 diabetes.
