Fermentation of Beets

Needed Ingredients:

  • 2 beets, raw and organic
  • 3 tablespoons of pickle juice
  • Half a teaspoon of Himalayan salt / Sea salt
  • Mineral or filtered water

Instructions:

Beets can be fermented with their skin. The used water needs first to get boiled, and then cooled off prior adding it to the beets.

Place the beets in a jar and then pour add 1/3 of water. Next, add 3 tablespoons of gherkin juice and Himalayan salt. Make sure to leave a little space in the jar as you need to shake it for fermentation. Place the jar at room temperature for one week. Your kvass will be ready for consumption when there are bubbles in the liquid and when it turns red.
