Anti-Inflammatory Coconut and Sweet Potato Muffins with Ginger, Turmeric, Cinnamon and Maple Syrup

But, what if we tell you that you can prepare healthy baked goods in your own kitchen. You may think that it is not possible, but the secret lies in the used ingredients and using proper measures.

The recipe that we are about to present is healthy and at the same time very delicious. This recipe involves the use of only healthy ingredients which can easily replace all those traditionally used inflammatory ingredients such as refined sugars, processed wheat, and vegetable oils like canola or safflower.

This recipe will not only provide you with healthy desserts, but as well as will help you to heal your body. It includes vegetables, milk, and spices that are very beneficial for your body.

Recipe of Tasty and Healthy Muffins

Needed Ingredients:

  • 1 small organic sweet potato filling 1 cup
  • 3 tablespoons of ground flaxseed
  • ¾ cup of organic coconut milk
  • 2 tablespoons of olive oil, organic
  • Half a cup of pure maple syrup or unpasteurized honey
  • 1 cup of brown rice flour, organic
  • ¼ cup of coconut flour, organic
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground turmeric
  • 1 tablespoon of cinnamon
  • 1 tablespoon of baking powder, aluminum free
  • Half a teaspoon of Himalayan salt
  • ⅛ teaspoon ofground cloves
  • ⅛ teaspoon of ground nutmeg

Method of Preparation:

First preheat the oven at 400F.

The flaxseed need to stay in half a cup of water for 10 minutes, and this will substitute the use of an egg.

By using a skewer make a dozen or more holes in the skin of the sweet potato, and then place it on baking tray in an oven. Cook for an hour or till it turns soft. Let it cool off, and then cut it in half and scoop out the insides and then place it in a large bowl. Next, include the coconut milk, flaxseed, olive oil, and maple syrup. Mix till you obtain a smooth texture.

In another container combine all of the listed dry ingredientsand after that add them to the potato mixture. Stir till everything is properly mixed.

Now, take the muffin tray, and oil it entirely with coconut oil. After that, pour the batter evenly into the muffin tray so that the muffin molds are around ⅔ full.  Bake them for 30 to 35 minutes.
