Even though this dish can be prepared any day because it is very simple, it can also be a great alternative to the classic roasted turkey on Christmas Day. The smell is marvelous while cooking so make sure to leave the kitchen door open so everyone can enjoy the sensational aroma.
8 pounds boneless ham, cooked and skin removed
¾ cup pomegranate juice
2 tablespoons olive oil
1 cup pomegranate molasses
2 tablespoons brown sugar
1 teaspoon fennel seeds
1 teaspoon cumin seeds
1 teaspoon cinnamon, ground
Zest from 1 orange
Seeds from 2-3 whole pomegranates
2 red onions, finely chopped
2 tablespoons ketchup
2 tablespoons pomegranate molasses
Juice from ½ orange
Preheat the oven to 390 degrees Fahrenheit.
In a bowl, mix together the pomegranate juice, oil, brown sugar, zest, fennel and cumin seeds and ground cinnamon.
Place the ham in a roasting pan. Season with salt and pepper to taste and pour most of the mixture over the meat. Roast for 30-40 minutes.
During cooking, brush the ham, once or twice, with the rest of the mixture.
To make the relish, simply mix all the ingredients in a bowl and serve with the ham.
