If you like mashed potatoes you can easily prepare a main dish and a side dish together.
Here is an original recipe for “potato nests” that doesn’t take much time and everyone at home, especially the children, will be delighted.
1 pound potatoes
1 clove garlic, finely chopped
½ cup cheese, shredded
½ pound chicken breast, chopped into small pieces
Boil the potatoes, mash, add the egg and make a puree (using an electric mixer). Allow to cool.
Finely chop the onion, sauté it and add the chicken together with the garlic. Add salt and pepper to taste and sauté until done.
Line the tray with baking paper and brush with a little oil or butter. Create a nest of mashed potatoes using a pastry bag. If you don’t have one, you can do it with a spoon.
Place the chicken filling inside the nests. Add shredded cheese on top.
Bake in preheated oven at 350 degrees for 25-30 minutes.
If you want, before serving, you can garnish the finished dish with chopped parsley.
